Bacon Cheeseburger Rollups
I have a weakness for Bacon Cheeseburgers, I will confess. The salty bacon, the gooey cheese, the awesome beef……. *sigh* It is perfection. Add in a little onion, pickles, ketchup, and mustard and you’ve hit it out of the park. Then, to top it off, you significantly reduce the carbs by making the vessel that gets all of that deliciousness to your face by losing the carby bun and replacing it with a low-carb tortilla that has been grilled to just the right crispness. Now! Yes Now it’s ready for dunking in the sauce of your choice or simply enjoying it as is.

Bacon Cheeseburger Rollups
Ingredients
- 1 pint canned beef or ground beef
- 6 slices cooked crisp bacon
- 3 oz favorite shredded cheese
- 1/2 cup diced onion
- 8 low carb tortilla wraps
On the side or mixed in depending on your preference
- 1/4 cup diced pickles
- ketchup to taste
- mustard to taste
Instructions
- In a large bowl mix the canned beef, onions, bacon and additional ingredients of your choice. I prefer to leave the ketchup out of it so I can dunk my roll ups
- Stuff the tortilla with 2-3 tablespoons of the mixture, roll tightly. Place seam side down in a heated skillet to crisp up and seal the roll up. Turn rollups as needed to crisp all around it.
- Serve warm with the side of your choice and dipping sauce if you like.
