Canning Burritos In a Jar

A quick and easy meal in a jar. Add some cooked rice, and a little cheese, put it all on a tortilla, and enjoy.

If you search the internet, you’ll find many horrible canning recipes for burritos in a jar. More often than not they will instruct you to can rice with the rest of the ingredients. This is a big no for safe canning.

Today I am bringing you a safe alternative for a quick and easy meal where you only need to heat some instant rice to make it complete.

Ingredients
  

Instructions
 

  • Prepare your beans per the NCFHFP (link above)
  • Cut up meat into 1 inch cubes and partially cook it
  • Combine rotel, onions, peppers and prepared beans in a pot
  • Add taco seasoning and 7 cups of water. Simmer for 5 minutes
  • Divide meat between jars
  • Top off jars with ingredients combined to one inch head space. Adding additional liquid as needed.
  • Wipe rims, add lids and rings,
  • Pressure can pints for 75 minutes, quarts for 90 minutes

    Love this recipe. I opened my first try jar today for a super quick really filling lunch. Topped with some cheese and a few crackers so full. Making my 2nd patch tonight and BF gets black beans in his (not my favorite) but with this recipe, everyone gets to have what they like and ready on the shelf. Love it.

    This is a winning recipe. I made a batch in January and am now making a second batch in mid March. This time I’ll be using Rump Roast. First time I used Sirlion Tip. It just depends what I can find on sale. I followed your suggestion and have been serving the Burrito mix over Minute Rice. Once it is canned, it is a great addition to the pantry that everyone likes.

  9. Lisa, I enjoy your teaching skills so much. However, I get a little crazy thinking about what can be pressured canned together. In one of your videos you talked about diced vs chp’d tomatoes…there’s a difference? I have a recipe that I make that I call Pepper Steak served over rice and I’d like to make it shelf stable. I use london broil and lots of tomatoes and bell peppers. Even tho it will pressured canned, do I still need to be conscience of the amounts?
    I cannot find a recipe that even comes close.
