Fiesta Pie is a favorite in our house. It’s as good the next day if you have any left-overs.

Fiesta Pie

Course dinner

Ingredients
  

  • 1 pint ground beef
  • 1 can black beans
  • 1 can Rotel
  • 1/2 cup diced onions
  • 1/2 cup diced black olives
  • tortilla shells
  • 4ish cups fiesta blend cheese
  • 1 pkg fiesta ranch mix

Instructions
 

  • combine the ground beef, onion, fiesta ranch mix, and rotel and heat
  • spray baking dish with oil
  • place tortilla shells on bottom
  • place mixture on tortilla shells in a thin layer
  • add a layer of cheese and sprinkle on olives
  • place next layer of tortilla shells
  • next layer of mixture
  • add layer of cheese and olives
  • repeat this process ending with cheese until the dish is full or your out of ingredients
  • bake at 375 for 40 minutes
  • allow to rest for 10-15 minutes before serving⅓
