Mediterranean Chickpea Soup
A delicious meatless meal that is sure to satisfy your meat and potatoes person.
Ingredients
- 1 & 1/2 PINTS Chickpeas ( or two cans)
- 1 Can diced tomatoes
- 1 cup canned spinach
- 1/3 cup freeze dried celery
- 2 tbsp dehydrated carrots
- 2 tbsp dehydrated or freeze dried onions
- 1 tsp paprika
- 1 tsp dried oregano
- 2 tsp diced garlic
- Salt and pepper to taste
- 32 oz broth of choice
Instructions
- Saute onions, carrots and celery in a tbsp of olive oil
- Add broth and remaining ingredients
- bring to a simmer and serve
