New Mexico Pinto Beans Meal Starter

Ingredients
  

  • 1 1/2 lbs Pinto Beans
  • 1 lb ground beef
  • 3 cloves garlic – crushed
  • 1 med chopped onion
  • 2 tsp red pepper flakes
  • 1/2 tsp pepper
  • 2 tsp oregano
  • 2 tsp thyme
  • 2 tsp cumin

Instructions
 

  • Clean, sort and soak pinto beans. To quickly hydrate beans, you may cover sorted and washed beans with boiling water in a saucepan. Boil 2 minutes, remove from heat, soak 1 hour and drain. Cover beans soaked by either method with fresh water and boil 30 minutes.
  • Cook ground beef just until it is no longer pink.
  • Mix beans and beef together along with spices
  • Divide mixture between jars (this makes 8 pint and a half jars)
  • Add hot water, beef broth, vegetable broth or a thin tomato sauce, leaving 1 inch headspace. Debubble and check headspace again.
  • Wipe rims, add lids and rings. Pressure can at the PSI for the size jars you choose.

    Well, this was the most delicious chili beans, ever! I didn’t include the meat, as I wanted to try it as refried beans in dips and burritos. Excellent! I figure I can add meat later, when I want chili. Thank you for this! You are a legend.
