Southwest Chicken from your pantry! The best kind of recipe!
This recipe yields 6 servings of yummy goodness that is easy pickings from your pantry staples. Adjust to your taste and enjoy in less than 20 minutes.
- 2 pints or cans black beans, rinsed and drained
- 1 pint chicken broth
- 1 can rotel
- 1 pint ugly chicken
- 1 cup chunky salsa
- 1 cup corn (frozen, canned or freeze dried)
- 1 tsp ground cumin
- 1/4 tsp ground pepper
- 3 cups cooked rice
- Mix everything together with the exception of the rice. Heat, service over hot rice.
